Making the Goji Berry Orange Cake
The cake starts with preparing the berries. First, you need to take out any refrigerated eggs (if they’re in there) and let them come up at room temperature while we work on other parts of our project!
Dried goji berries are a little chewy, but they plump up when soaked. I usually soak mine for around 30 minutes to give them some tenderness and make sure that the fruit holds its shape well in recipes like salads or smoothies without turning into pulp before it’s time!
Making the batter
